Malt Forward Beers

Session Lager 3.5% (Perth Beer Show Silver 2019/20)

An easy drinking thirst quenching traditional lager, with plenty of flavor. For those that want a ‘real beer’ that is lower in alcohol.

Pilsener 5% (PRBS Silver Medal 2019, Bronze 2021)

A classic lager style. Well attenuated with a dry, crisp and refreshing finish. Czech Saaz aroma hops are used exclusively.

Kolsch 5% (PRBS Bronze Medal 2020)

An ale that tastes like a lager. Not quite as dry finishing as a pilsener and very slightly fruity.

English Pale Ale 4.5% (PRBS Bronze Medal 2020)

The classic English beer style that all pale ales evolved from. Balanced hop bitterness, low hop character, and a distinctive fermentation character. Malt flavors and aromas including toffee, caramel, and biscuit.

Oatmeal Stout 4.4% (PRBS Silver 2020, Bronze 2021)

Traditionally brewed oatmeal stout (with a secret ingredient). Moderate alcohol with loads of smooth chocolate, coffee, and roasted malt notes topped with a creamy caramel head.

London Porter 5.7% (PRBS Silver Medal 2019/20/21)

The historic pre-cursor to stout and the first industrialised mass- produced beer. Lighter in colour than stout with a restrained roasty character and some sweeter chocolate notes.

Schwarzbier (Black Lager) 4.8%

Schwarz means black in German. Schwarzbiers are opaque, very dark mahogany lagers. Restrained noble hop bitterness and aroma with low roasted malt notes and a dry finish. Despite its appearance the beer should not drink like a ‘dark’ beer.

Oktoberfest Marzen 5.3%

Traditionally brewed in Spring, Marzen was the original Oktoberfest beer. A malty lager low in bitterness, brewed using Vienna and Munich malts, noble hops.

Yeast Forward Beers

Saison 5.9% (PRBS Bronze Medal 2019/21, Silver 2020)

A Traditional farmhouse ale from Wallonia, Southern Belgium. Specifications for this beer are wide making it a favourite of many brewers who like to experiment with the style.

Hefeweizen 5.3% (PRBS Bronze Medal 2021)

Traditional Bavarian wheat beer. Unfiltered and malt accented. Signature flavors described as spicy and fruity with notes of clove, banana & bubblegum – come exclusively from the specialty yeast used.

Belgian Witbier 5.7% (PRBS Silver Medal 2021)

A traditional Witbier malt bill with added kettle spices (Curacao orange & coriander). It finishes refreshingly dry and estery with a touch of complexity from the spices used.

Rye Beer/Roggenbier 5.7% (PRBS Silver Medal 2021)

Brewed with 30% malted rye, this traditional German ale is mid amber in colour, low in hop bitterness, and full bodied. The combination of rye malt and specialty yeast used lend the beer notes of ‘banana bread’.

Hop Forward Beers

American Amber 3.8%

A red/amber ale exhibiting more malty notes than a pale ale. Moderate bitterness and mild citrus hop notes are balanced with malt flavour and body. A true session ale.

Australian Pale Ale 4.8% (PRBS Bronze Medal 2021)

A restrained version of the popular American pale ale exhibiting plenty of fruity Australian hops. Tropical fruit and mild citrus notes from Galaxy hops are balanced by a touch of malt character.

IPA (India Pale Ale) 5.8%

A ‘not so in your face’ version of America’s most loved beer style, West Coast IPA. Malt, hops, and alcohol are all in sync, making this a beer with maximum drinkability.

Gluten Free Tropical Pale Ale 5.3%

Brewed using only gluten free malted grains including millet and buckwheat, this ‘single keg batch’ was dry hopped with Amarillo, Mosaic, and Simcoe hops. Citrus and fresh tropical characters abound in this special one-off brew.

Sour/Fruited Beers

Raspberry and Guava Sour 4.8%

We only brewed one keg of this beer as a trial batch but it was so successful we will likely make it a regular. Fermented with a new yeast variety called ‘Philly Sour’ and added guava and raspberry purees. This unique yeast strain first produces lactic acid dropping the beers pH to 3.6 (nicely tart) and then produces alcohol. Dry and tart with floral and tropical flavours and aromas it’s been a real crowd pleaser.

Guava and Passionfruit Sour 4.8%

Same yeast different fermenter fruit additions. The degree of sourness is directly related to the fermentation temperature. Increased temp. = more lactic acid = tarter beer! Despite this the aim is to balance the acid, fruit, and residual sweetness.

Reserve Beer (Goblet)

Helles Bock 6.7%

Historically bocks were brewed by Bavarian Monks as a source of nutrition during times of fasting. This version is a helles lager brewed to a bock strength, but lighter in colour, less malty, drier, and with more hop bitterness.

Barrel Aged Belgian Tripel 8.4%

Similar to the Tripel but darker in colour with more malt character and fruitiness. 12 months in wood has dried the beer out and added to the already complex flavours and aromas.

Barrel Aged Belgian Dubbel 7.6%

A ‘not so in your face’ version of America’s most loved beer style, West Coast IPA. Malt, hops, and alcohol are all in sync, making this a beer with maximum drinkability.

Barrel Aged Baltic Porter 7.9% (PRBS Bronze 2020)

A big, complex, and flavourful dark ale with restrained roasty character and sweet malty notes open-fermented in a headless 500L ex-red wine Puncheon.

Barrel Aged IPA 7.3%

Matured for 14 months in French oak red wine barrels. A complex fruity example of a rarely made beer style exhibiting citrus and floral flavours and aromas. It finishes dry with a lingering tannic bitterness.

Whisky Barrel Aged Old Ale 14.1% (PRBS Silver 2021)

A very old English beer style predating Porter, traditionally aged in oak casks. Dark amber in colour, with complex earthy notes reminiscent of an old port. Only one keg of this beer was brewed in 2017. Aged for 6 months in a small single malt whisky cask that previously held a vintage port. The beer entered the cask at 8.3% alc. but due to extraction from the wood, emerged at a whopping 14.1%

Barrel Aged Saison 7.4% (Silver 2020, Bronze ‘21)

12 months in French oak red wine barrels. Balanced acidity, biscuit malt character and spicey fruit from the barrel and added kettle spices.

Barrel Aged Bavarian Bockbier 6.5%

Bockbiers are Bavaria’s traditional strong lagers. They are typically smooth and malty lagers with a gentle bitterness. Aged in a Capel Vale red wine cask that previously held Union Saison. This version is golden blonde in colour with both the cask and its previous contents contributing subtle complexity to this traditional German beer style.

Barrel Aged Belgian Witbier 6.4%

The same recipe as our standard witbier but with a slightly higher alc % to help withstand 12 months aging in ex red wine casks. It finishes even drier than normal with barrel character adding complexity to the classic witbier esters.

Barrel Aged Vintage American Barley Wine 9.3%

A traditional high gravity English beer style hijacked by the Americans and amped up! This is a ‘big beer’ in every sense. Deep ruby red in colour with loads of body and complexity from the malt, barrel, and alcohol. Brewed in 2017 and aged in wine barrels for 18 months before kegging, it then sat patiently in the cool room for another couple of years!

Ciders

Apple Cider 4.9%

A crisp, refreshing, and well-balanced apple cider, not too sweet and not too dry. A small percentage of pear juice is added post-fermentation for a touch of sweetness and body.

Apple & Blueberry Cider 5%

Our apple cider(see above)with added blueberry.

GAP Cider (ginger, apple, & pear) 3.8%

Our most popular cider.Lower alcohol, slightly sweeter without being cloying, and with a spicy ginger finish. Very refreshing.

Barrel Aged Apple Cider 6.5%

A traditional apple cider matured in used red wine barrels. It finishes very dry, with added complexity from aging 12 months oak.
